Here we have recipes for lunch, dinner, healthy, vegetarian, vegan, sweets and to make in the air fryer. In time: no waste in the kitchen. This recipe is given by Regina Tchelly.

Easy lunch recipes 

Roasted thigh with sweet potato and pepper 

6 chicken thighs with skin 

2 sweet potatoes

1 large red pepper 

6 large garlic cloves 

5 tablespoons of olive oil 

3 teaspoons cumin 

1 teaspoon of turmeric

3 teaspoons of salt 

5 sprigs of rosemary 

In a large bowl, mix three tablespoons of olive oil with the cumin, turmeric and two tablespoons of salt. Add the thighs and, with your hands, mix the seasoning well under and over the skin of each piece. Leave to marinate at room temperature. 

Peel and cut the sweet potatoes. Cut the pepper lengthwise, discard the seeds and cut each half into three centimeter squares. Peel and keep the garlic cloves whole. Wash and dry the rosemary sprigs. 

In a baking dish, place the sweet potato and pepper pieces, the garlic cloves and rosemary. Season with the remaining salt and olive oil and mix well to coat all the pieces.

Make 6 spaces in the pan for the thighs. Bake for 20 minutes at 200 degrees, until the skin starts to brown. Reduce the oven temperature to 180 degrees and leave for another 30 minutes for the chicken to finish roasting and the skin to become golden. 

Steaks in mustard sauce

4 steaks in the cut of your choice (about 600 grams in total)

Salt and black pepper to taste

2 garlic cloves 

3 tablespoons of butter 

1 medium onion chopped

1 cup dry white wine 

2 tablespoons mustard

Half a teaspoon of sugar

Half a teaspoon of cornstarch 

Season the steaks with garlic, salt and pepper. In a pan, fry them in butter until desired doneness. Remove and reserve.

In the butter that remained in the pan, brown the onion and garlic over low heat. Add the wine and, over high heat, let it reduce to half the volume.

Remove from the heat, pass through a sieve and return the sauce to the pan. Add the mustard, sugar and starch and heat well, stirring constantly. Serve with the steaks. 

Easy dinner recipes

Curried carrot soup

Half a kilo of carrots, peeled and cut into small pieces 

2 medium potatoes, peeled and cut into small pieces 

1 medium onion in pieces

5 cups of chicken broth 

1 tablespoon of curry 

2 teaspoons grated fresh ginger 

Salt to taste 

1 teaspoon lemon juice 

1 tablespoon of green part of green onion, finely chopped 

Place the carrot, potato and onion pieces, chicken broth, curry and ginger in a pan. Bring to the fire. Cover and let it boil.

Lower the heat and simmer slowly for about 20 minutes or until the vegetables are tender. Remove from heat.

Let cool slightly, covered, for about 10 minutes, then blend in a blender. Return the soup to the pan and heat to heat. Decorate with chives. 

Ricotta and spinach gnocchi

300 grams of crumbled ricotta 

1 egg 

Half a bunch of chopped spinach 

Salt and pepper to taste 

Mix all the ingredients until a moldable dough forms. If it's too dry, add a drizzle of olive oil.

Roll into balls or large gnocchi and place on a baking tray. Bake in a preheated oven at 180 degrees for about 20 minutes or until golden.

Cover with red sauce, sprinkle with grated cheese and place in the oven to brown. 

Easy candy recipes

Pear with rapadura syrup 

5 pears 

3 and a half cups of water 

Peel and juice of 1 lemon 

2 raw cinnamon 

3 thick slices of ginger 

Half a cup of grated jaggery

Peel and cut the pears lengthwise, keeping the stem. With a coffee spoon, remove the core with the seeds. Make strips of the lemon peel, but without the white part.

In a pan, place the pears, lemon peel and broth, water, ginger and cinnamon and place over medium heat. Once it boils, lower the heat and let it cook for 35 minutes or until the pears are soft but not falling apart.

Add the jaggery to the pan and cook for another 10 minutes to form a fragrant syrup.

Transfer the cooked pears with the syrup to a bowl and let it cool before putting it in the fridge. Serve chilled with whipped cream. 

Creamy Cocada

1 grated coconut 

2 cups of sugar 

1 cup of water 

Place all the ingredients in a pan on the fire and stir until the sugar dissolves. Cook over medium heat, stirring occasionally, until you get a creamy coconut.

Remove from heat, place on a plate and let cool. You can eat it with a spoon or use it as a filling. 

Easy healthy recipes 

Functional pumpkin puree 

Half a cabotiá pumpkin 

1 tablespoon olive oil

1 teaspoon of turmeric 

1 tablespoon toasted sesame seeds 

Salt, pepper and parsley to taste 

Steam the pumpkin, microwave it, cook it in water or bake it in the oven. Blend the cooked pumpkin in a blender with the salt, pepper, olive oil and turmeric.

Place the puree in a pan and cook quickly. Finish with parsley. Serve with toasted sesame seeds. 

Keto margherita pizza

Pasta

3 eggs

2 tablespoons of psyllium 

2 tablespoons almond flour

1 teaspoon of chemical yeast

1 teaspoon of salt 

Filling 

Half a cup of tomato sauce 

1 cup mozzarella cheese 

Tomato in slices

Basil Leaves 

Mix all the dough ingredients in a bowl. Place the dough on a baking tray greased with olive oil and place in a preheated oven at 200 degrees. Bake for about 15 minutes.

Remove from the oven. Spread the sauce over the pasta, then add the cheese and tomato slices. Return the pizza to the oven until the cheese melts. Spread the basil. 

Easy vegetarian recipes 

Noodles with cheese and mushroom sauce 

1 package of noodles

3 tablespoons butter or margarine 

4 tablespoons chopped onion

1 clove of garlic, squeezed 

2 tablespoons of wheat flour

4 cups of warm milk

2 cups fresh mushroom 

1 and a half cups of semi-cured cheese coarsely grated

4 tablespoons grated parmesan

4 tablespoons chopped parsley

Clean the mushrooms with a dry paper towel and chop. Melt the butter, add the onion, garlic and mushrooms and fry. Add the flour and stir.

Add the milk little by little, stirring constantly. Add the cheeses. Stir until they melt. Add the parsley. Cook the pasta al dente, drain it and mix it with the sauce. Serves 4 people. 

Tomato risotto 

4 tablespoons chopped onion

1 tablespoon of butter 

4 tablespoons of raw arborio rice 

A quarter cup of tomato pulp

1 and a half cups of vegetable broth

Half a cup of white wine 

In a pan, fry the onion in butter until soft. Add the rice and fry until it is lightly golden. Add the white wine.

Add the vegetable broth little by little, stirring constantly, until all the broth is absorbed. The rice grain must be soft. 

Easy vegan recipes

Cassava dumplings

1 cup cassava (cassava) 

Salt and black pepper to taste 

2 tablespoons of oregano

1 tablespoon chopped parsley

2 tablespoons golden flaxseed flour

Cook the cassava with salt and water for 30 minutes. Mash the cassava with a fork, add the seasonings and mix. Shape the dumplings and coat them in golden linseed flour.

Place in a preheated oven at 200 degrees for about 20 minutes. 

Bean and quinoa burger

4 tablespoons of cooked beans without broth 

2 tablespoons cooked quinoa

Salt to taste 

1 tablespoon of cooked parsley 

1 tablespoon cooked chives 

1 tablespoon oregano 

2 tablespoons of hydrated flaxseed (soak for 5 minutes in a quarter cup of water)

2 tablespoons flaxseed flour 

Preheat the oven to 200 degrees. Mash the beans with a fork, mix with the quinoa and knead more. Add the spices and flaxseeds.

Shape the dough into a hamburger shape, coat in linseed flour and bake for about 20 minutes. 

Easy recipes in the air fryer

Eggplant paste 

2 eggplants 

2 garlic cloves 

1 tablespoon of lemon juice 

2 tablespoons of olive oil 

Salt, paprika and black pepper to taste 

Wash and dry the eggplants. With a knife, make holes in the eggplants and place in the airfryer for 15 minutes at 200 degrees. Remove from the airfryer and place in a bowl.

With a spoon, remove the pulp from the eggplants and mix with the garlic, lemon juice, salt and olive oil in a food processor or with a mixer. Leave to cool in the refrigerator.

Drizzle the paste with a drizzle of olive oil and sprinkle with paprika, pepper and chives.
