What is the main characteristic of Mexican food?

Mexican food's main characteristic is the richness of flavors, especially spicy, with different seasonings, colors and textures and variety of ingredients and spices. 

The main ingredients of Mexican food are chile (pepper variety), corn, beans, avocado, jitomate (tomato variety), green tomato, onion, garlic, pumpkin, cocoa, cinnamon, etc. 

One of the most important cuisines in the world, Mexican cuisine reflects the geographical diversity of the country, which has mountainous, desert and coastal regions.

Mexican food is so significant and a crucial element of Mexican identity that it has been recognized as a Cultural Heritage of Humanity by UNESCO since 2010. 

Mexican dishes

Mexican dishes are very diverse and vary from region to region. Corn is the basis of many typical Mexican dishes, such as tortillas, panucho, enchiladas and tacos. 

Salsas are highlights among Mexican dishes. It is unthinkable to eat authentic Mexican food without salsa (sauce). 

Salsa, in general, contains roasted or fresh tomatoes —jitomate or green tomatoes—, onion, garlic, coriander, olive oil and, of course, chiles, of different colors, sizes, dried or fresh. 4

Meat has a strong presence in Mexican dishes, with emphasis on pork, chicken and fish. Pollo con mole (chicken in chocolate sauce) is a typical dish. 

Soups, broths and casseroles are also part of traditional Mexican dishes. 

An unusual ingredient that is part of Mexican dishes is the insect. Insects have been part of Mexican cuisine since pre-Hispanic cultures. 

In different regions of Mexico, around 549 varieties of insects are consumed, which include earthworms, worms, beetles, grasshoppers and ant eggs, the Mexican “caviar”. 

Mexican food with avocado

Guacamole is the most emblematic dish of Mexican food with avocado. The paste is made with avocado puree, onion, tomato, lemon, green pepper and chilli and coriander. 

But other avocado dishes are part of Mexican food, such as avocado stuffed with tuna or eggs, salads and cold cream. 

Mexican food with pepper

Pepper is present in practically all Mexican food dishes. In Mexico, there are at least 64 varieties of domesticated peppers — chiles, as they are called. 

These peppers come in a variety of colors (yellow, red, green and orange), size and spiciness. 

Chile en nogada is one of the most traditional Mexican foods with peppers. It is a pepper stuffed with beef and pork, eggs, apples, goat cheese and walnuts. 

Another traditional dish is pozole, a broth made from white corn grains, beef and pork and the ancho chile pepper, known as jalisco. 

Mexican dessert 

Churros are the most famous Mexican dessert of all. Covered with sugar and cinnamon, the long, thin dough is fried and accompanied by dulce de leche. 

Flans and puddings are also Mexican desserts, such as cinnamon flan. Rice pudding is also a typical dessert.
